It&#8217;s good chili! It&#8217;s a tiny bit too<br \/>\nhot, but it tastes really really good.  I think if I were to do a<br \/>\nsecond batch I&#8217;d cut down on the cayenne pepper a little bit (but not<br \/>\nmuch). Yum.<\/p>\n<p>Here&#8217;s the recipe This came about after getting a chili recipe from<br \/>\na friend online.  As I was looking around to find out more about chili<br \/>\nI decided to be more daring and try something that was my own original<br \/>\nrecipe.<\/p>\n<p><h4>Ingredients<\/h4>\n<\/p\n\n\n<p>3 strips of bacon<br \/>\n3 lbs of lean meat (diced or ground (but diced is better))<br \/>\n1 small onion, diced<br \/>\n10 cloves garlic, chopped<br \/>\n1 can diced tomatos (drained)<br \/>\n1 tsp ground cumin<br \/>\n6 tbsp chili powder<br \/>\n4 tbsp paprika paprika (for color, but also adds flavor if good<br \/>\npaprika)<br \/>\n1 tsp red pepper (I used ground cayenne pepper)<br \/>\n2 Tbsp honey<br \/>\n3 Tbsp flour<br \/>\n6-8 Tbsp corn meal<br \/>\n32 oz of beer<\/p>\n<ol>\n<li>Cook bacon in the pot you will be using.  I was using a dutch oven.<br \/>\nCook it down till it&#8217;s almost crispy.  Scoop bacon and put aside for<br \/>\nbacon bits.<\/li>\n<li>Add garlic and onion, let cook for about 2 minutes, stirring the<br \/>\nwhole time, till the onions start to soften.<\/li>\n<li>Add the meat, saute it till it gets grey, but not really browned,<br \/>\nadd tomatos, and beer, bring everything to a boil then simmer at low<br \/>\nheat for 30 minutes.<\/li>\n<li>Add spices, and simmer for 1 hour. <\/li>\n<li>Add honey and simmer for 30 min more.<\/li>\n<li>Remove a bit of the hot liquid (or, use<br \/>\napproximately 1 cup of water) and mix the flour and corn meal until<br \/>\nblended. Add to chili pot and cook 5 minutes more to determine if more<br \/>\nwater or more thickening is needed. Stir to prevent sticking after<br \/>\nadding the thickening.<\/li>\n<li>Serve with whatever chili condements you like. I personally like<br \/>\nlots of cheese.<\/li>\n<\/ol>\n<p>So there goes.  Warning for anyone making it, it&#8217;s pretty hot. I<br \/>\nrecommend a beer with it to help cut the heat some.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>The results are in and yow!
